- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon peanut butter
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 (400 g) can butter beans, drained
Directions

1Heat the oil in a pan, add the onion and garlic and fry for 3-5 minutes until soft.

2Add the remaining ingredients to the onion mixture and mash everything together with a fork.
