Bean Pot Soup

Ingredients

  • 1 c. dried navy beans
  • 1 (1 lb. 4 oz.) can tomatoes
  • 1 carrot, cubed
  • 1 beef bouillon cube
  • 1/4 tsp. pepper
  • 1 Tbsp. shortening
  • 3 qt. water
  • 1 c. diced celery
  • 1 potato, cubed
  • 1 Tbsp. salt
  • 1/2 lb. ground beef
  • 1/4 c. rice

    Wash the beans.

    Add to the water and bring to a boil.

    Boil 2 minutes. Remove from heat and let the beans soak for 1 hour. Simmer the beans for 20 minutes. Add tomatoes, celery, carrot, potato, rice, onion, bouillon cube, salt and pepper.

    Brown the ground beef in shortening.

    Bring soup to a boil.

    Add the meat. Cover and simmer for 1 hour.
