Bean Salad

Ingredients

  • 3/4 c. granulated sugar
  • 3/4 c. vinegar
  • 1/2 c. oil
  • 1/2 c. water
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 can red kidney beans
  • 1 can garbanzo beans
  • 1 can cut green beans
  • 1 can yellow wax beans
  • 1 small red onion, sliced

Directions

    Heat first 6 ingredients and melt sugar.

    Open cans of beans and drain off juice.

    Put beans into large bowl or large jar. Add onions.

    Pour sugar/vinegar mixture over beans while mixture is still hot.

    Set aside to cool.

    Place in refrigerator.

    Stir occasionally.

    Marinate 4 hours or overnight.

    Drain juice and save for salad dressing.

    Serve beans drained.

    Unused beans can be returned to juice.

    Will keep for several days.
