Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can white shoepeg corn, drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 12 medium red onion, minced (or to taste)
  • 1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced
  • 14 cup red wine vinegar or 14 cup white wine vinegar
  • 14 teaspoon stevia (original 1/4 cup sugar)
  • 14 cup olive oil (original 1/2 cup olive oil)

Directions

    Mix all the beans together.

    Add onions and bell peppers.

    For the dressing, dissolve Stevia in vinegar.

    Add oil.

    Mix well.

    Pour over beans.

    Mix and chill for 1-3 hours.

    Overnight works even better.
