Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can white shoepeg corn, drained
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 12 medium red onion, minced (or to taste)
- 1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced
- 14 cup red wine vinegar or 14 cup white wine vinegar
- 14 teaspoon stevia (original 1/4 cup sugar)
- 14 cup olive oil (original 1/2 cup olive oil)
Directions

1Mix all the beans together.

2Add onions and bell peppers.

3For the dressing, dissolve Stevia in vinegar.

4Add oil.

5Mix well.

6Pour over beans.

7Mix and chill for 1-3 hours.

8Overnight works even better.
