Ingredients
- 1 1/2 c. chickpeas, drained
- 1/4 lb. fresh green beans, cooked
- 1/4 lb. fresh yellow beans, cooked
- 2 shallots, chopped
- 1 1/2 Tbsp. mustard
- 1 clove garlic, chopped
- 2 Tbsp. oil
- 6 Tbsp. vinegar
- 1 Tbsp. chopped parsley
- 1/2 tsp. tarragon
- salt
- pepper
Directions

1Place chickpeas and green and yellow beans in mixing bowl. Season well.

2Place shallots, mustard, garlic, vinegar and oil in small bowl.

3Season and, using a wire whisk, mix well until thick. Pour dressing over beans.

4Mix well.

5Add parsley and tarragon; mix well.

6Let sit 15 to 30 minutes at room temperature.
