Ingredients

  • 1 1/2 c. chickpeas, drained
  • 1/4 lb. fresh green beans, cooked
  • 1/4 lb. fresh yellow beans, cooked
  • 2 shallots, chopped
  • 1 1/2 Tbsp. mustard
  • 1 clove garlic, chopped
  • 2 Tbsp. oil
  • 6 Tbsp. vinegar
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. tarragon
  • salt
  • pepper

Directions

    Place chickpeas and green and yellow beans in mixing bowl. Season well.

    Place shallots, mustard, garlic, vinegar and oil in small bowl.

    Season and, using a wire whisk, mix well until thick. Pour dressing over beans.

    Mix well.

    Add parsley and tarragon; mix well.

    Let sit 15 to 30 minutes at room temperature.
