Bean Salad Recipe

Ingredients

  • 1 can Black Beans or possibly cook about a half a bag til tender, (not mushy)
  • 1 sm Onion minced to your desire
  • 2 x Ribs of celery minced
  • 1 x Ear of roasted corn cut off the cob, (optional)
  • 1 x Tomato minced, (optional) Some minced pepper, whatever kind you like, even bell is good for the faint of heart
  • 1/2 x A bunch of Cilantro, if you just use the leaves, it's got a milder flavor, the stems are the strong, spicy part
  • 1 Tbsp. Vinegar, about
  • 1 Tbsp. Extra virgin olive oil, about Salt and pepper to taste

Directions

    Mix it all up, let the flavors merge in the frig, then enjoy.

    It's even better the next day.

    Bet avocado would be good in it too, but I've not tried to add in it.
