Bean Soup

Ingredients

  • 1 or 2 c. beans
  • 3 smoked ham hocks
  • 1 or 2 onions
  • 1 large carrot
  • 2 stalks celery
  • 1 potato
  • 1 handful rice
  • water
  • pepper
  • salt

Directions

    In a heavy kettle, soak beans overnight.

    Drain beans.
  3. 3
    Cover with 2 quarts water.

    Scrub and score ham hocks.
  5. 5
    Add to kettle. Cut up or dice all vegetables; add all at once.

    Add rice. Season to taste.

    Cook until beans are done; stir often.

    Add more water as needed.

    Remove ham hocks; cut apart.

    Add any ham to soup.
