- 1 or 2 c. beans
- 3 smoked ham hocks
- 1 or 2 onions
- 1 large carrot
- 2 stalks celery
- 1 potato
- 1 handful rice
- water
- pepper
- salt
Directions

1In a heavy kettle, soak beans overnight.

2Drain beans.

3Cover with 2 quarts water.

4Scrub and score ham hocks.

5Add to kettle. Cut up or dice all vegetables; add all at once.

6Add rice. Season to taste.

7Cook until beans are done; stir often.

8Add more water as needed.

9Remove ham hocks; cut apart.

10Add any ham to soup.
