  • 3 c. assorted dry beans
  • 1 ham hock
  • 1 large can tomatoes
  • 1 tsp. chili powder
  • juice of 1 lemon
  • 2 stalks celery
  • 1 large onion
  • 2 qt. water
  • pepper to taste

Directions

    Put beans in a bowl and cover with water.

    Let soak overnight. Dice ham hock.
  3. 3
    Add ham, tomatoes, chili powder, lemon juice, sliced celery and sliced onion to water and bring to a boil.

    Turn to simmer.

    Add beans and pepper to taste.

    Let simmer all afternoon.
