- 3 c. assorted dry beans
- 1 ham hock
- 1 large can tomatoes
- 1 tsp. chili powder
- juice of 1 lemon
- 2 stalks celery
- 1 large onion
- 2 qt. water
- pepper to taste
Directions

1Put beans in a bowl and cover with water.

2Let soak overnight. Dice ham hock.

3Add ham, tomatoes, chili powder, lemon juice, sliced celery and sliced onion to water and bring to a boil.

4Turn to simmer.

5Add beans and pepper to taste.

6Let simmer all afternoon.
