Bean Soup

  • 2 c. dry beans (assorted or your choice)
  • 1/2 c. onion, chopped
  • 4 to 6 cloves garlic, chopped
  • 1 (16 oz.) can Old El Paso taco sauce (mild or medium)
  • dash of pepper (if desired)

Directions

    Soak beans overnight in water.

    Drain and add fresh water to cover beans about 2 inches.
  3. 3
    Bring to a boil; turn to lower heat and simmer, covered, about 1 hour with the onion, garlic and pepper.

    Add the taco sauce (and more water, if needed) and cook 1/2 hour longer or until beans are done.

    Serve with cornbread for a complete protein.

    Makes 8 to 10 servings.
