Bean Soup

- 2 c. dry beans (assorted or your choice)
- 1/2 c. onion, chopped
- 4 to 6 cloves garlic, chopped
- 1 (16 oz.) can Old El Paso taco sauce (mild or medium)
- dash of pepper (if desired)
Directions

1Soak beans overnight in water.

2Drain and add fresh water to cover beans about 2 inches.

3Bring to a boil; turn to lower heat and simmer, covered, about 1 hour with the onion, garlic and pepper.

4Add the taco sauce (and more water, if needed) and cook 1/2 hour longer or until beans are done.

5Serve with cornbread for a complete protein.

6Makes 8 to 10 servings.
