Ingredients
- 1 lb. mixed beans
- 9 c. water
- 1 c. minced onion
- 1 c. minced celery
- 1 c. chopped carrots
- 2 c. shredded kale
- 1 c. chopped tomatoes
- 1 Tbsp. dried thyme
- 1 bay leaf
- 1 lemon, juiced
- minced scallions
- spinach or other greens
- salt
- pepper
Directions

1Rinse and pick over beans.

2Put in a large pot with the water, onions and celery.

3Simmer for 2 hours.

4Add the remaining ingredients, except the lemon juice and scallions, and simmer, covered, for 1 hour.

5Mash or puree half the soup in a food processor.

6Combine with rest of soup.

7Season with the lemon juice, salt and pepper.

8Serve garnished with the minced scallions.
