Bean Soup

Ingredients

  • 1 lb. mixed beans
  • 9 c. water
  • 1 c. minced onion
  • 1 c. minced celery
  • 1 c. chopped carrots
  • 2 c. shredded kale
  • 1 c. chopped tomatoes
  • 1 Tbsp. dried thyme
  • 1 bay leaf
  • 1 lemon, juiced
  • minced scallions
  • spinach or other greens
  • salt
  • pepper

Directions

    Rinse and pick over beans.

    Put in a large pot with the water, onions and celery.

    Simmer for 2 hours.

    Add the remaining ingredients, except the lemon juice and scallions, and simmer, covered, for 1 hour.

    Mash or puree half the soup in a food processor.

    Combine with rest of soup.

    Season with the lemon juice, salt and pepper.

    Serve garnished with the minced scallions.
