Bean Soup

- 1 1/2 c. dry navy beans or Great Northern beans
- 7 c. water
- 1 large onion
- 1 tsp. salt
- 1 ham bone or 1 c. diced ham
- 3 grated carrots
Directions

1Wash beans and drain.

2Put beans and water in a pot and bring to a boil.

3Continue to boil 2 minutes.

4Remove from heat.

5Cover and let stand one hour.

6Add onion, salt, ham and carrots to the beans.

7Cover and simmer about 2 1/2 hours or until beans are soft.

8For thicker soup, simmer longer.
-
9Add additional water for thinner soup.
-
10This soup freezes very well and tastes just as good.
