- 1 lb. dry navy beans
- 1 meaty ham bone
- 1 large onion, chopped
- 2 celery stalks, chopped
- 2 carrots, grated
- salt to taste
- 1/2 tsp. pepper
- 1/2 tsp. thyme
- 1 (28 oz.) can tomatoes
- 1 1/2 c. finely shredded spinach leaves
