Bean Soup

Ingredients

  • 1 qt. water
  • 1 lb. Northern beans
  • 1 ham hock
  • 2 ribs celery, diced
  • 1/4 lb. bacon
  • 1 small onion, chopped
  • 1 c. diced potatoes
  • 1 c. water
  • salt and pepper to taste

Directions

    Put 1 quart water, beans, ham hock and celery in large kettle. Brown bacon with onion and add to beans.

    Simmer about 3 hours. Add diced potatoes and simmer 1 hour longer with 1 cup water.

    Add salt and pepper to taste.
