Bean Soup

Ingredients

  • 1 lb. Great Northern beans
  • 2 qt. cold water
  • 3 Tbsp. oil
  • 1 large onion, diced
  • 2 cloves garlic or 1/2 tsp. minced garlic
  • 3 carrots, sliced
  • 2 tsp. salt
  • 1 bay leaf
  • 1 (16 oz.) can tomatoes and liquid
  • 1/4 c. chopped parsley
  • pepper to taste

    Wash beans.

    Soak overnight in cold water.

    Heat oil, saute onion and garlic in soup kettle.
  4. 4
    Add beans and soaking water, bay leaf and salt.

    I add chicken base and 2 strips of lean bacon. Simmer until beans are tender.

    Remove 2 cups of beans without liquid to blender.

    Drain tomato liquid into blender and puree with beans until smooth.

    Chop tomatoes.

    Return pureed beans, tomatoes and parsley to soup.

    Season to taste with more salt and pepper.
