Bean Soup

Ingredients
- 1 lb. Great Northern beans
- 2 qt. cold water
- 3 Tbsp. oil
- 1 large onion, diced
- 2 cloves garlic or 1/2 tsp. minced garlic
- 3 carrots, sliced
- 2 tsp. salt
- 1 bay leaf
- 1 (16 oz.) can tomatoes and liquid
- 1/4 c. chopped parsley
- pepper to taste
Directions

1Wash beans.

2Soak overnight in cold water.

3Heat oil, saute onion and garlic in soup kettle.

4Add beans and soaking water, bay leaf and salt.

5I add chicken base and 2 strips of lean bacon. Simmer until beans are tender.

6Remove 2 cups of beans without liquid to blender.

7Drain tomato liquid into blender and puree with beans until smooth.

8Chop tomatoes.

9Return pureed beans, tomatoes and parsley to soup.

10Season to taste with more salt and pepper.
