- Butter, for the mold
- 2 cups milk
- 2/3 cup yellow cornmeal
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons butter
- 3 eggs, separated
- 2 teaspoons baking powder
- 2 quart souffle dish or ovenproof baking dish
Directions

1Generously butter the souffle dish.

2Preheat the over to 350 F.

3In a heavy medium saucepan, scald the milk.

4Do not let it boil.

5Combine the cornmeal, salt and sugar, and slowly stir into the milk.

6Add the butter and stir constantly over moderate heat for 10 minutes.

7Off the heat, stir in the egg yolks and baking powder.

8Let cool.

9In a bowl, beat the egg whites with a dash of salt until they form soft peaks.

10Thoroughly blend about 1/2 cup of the egg whites into the cornmeal mixture to lighten it.

11Gently fold in the remaining egg whites, do not overblend.

12Pour the mixture into the buttered mold and bake for 30 to 35 minutes, until golden.
