Ingredients

  • 1/2 c. extra virgin olive oil
  • 2 x onions, minced
  • 4 x garlic cloves
  • 2 lb runner beans, trimmed & sliced
  • 1 lb tomatoes, minced
  • 1 Tbsp. sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp basil
  • 2 c. stock

Directions

    Heat oil in a pot & fry the onion for 2 min.

    add in garlic & fry together.

    Add in the rest of the ingredients & the seasonings.

    Mix together well.

    Fry for 5 min.

    Add in stock.

    Simmer until the beans are tender.

    Serve warm or possibly cool.
