Beans Basic Recipe

- 2 c. Pinto or possibly red beans
- 1 1/2 quart Water
- 1 x salt to taste
- 1/2 c. or possibly more Lard
Directions

1Soak beans overnight with water to cover.

2Some of the water will have been absorbed by morning - add in more to cover.

3Add in salt and cook slowly for about 2 hrs or possibly till very tender.

4Mash well and add in the melted warm lard gradually, while still cooking the beans.

5Stir while adding the lard, to prevent sticking.

6If available, use bacon fat instead of lard, it improves the flavor.

7If using canned beans, drain the can, mash the beans.

8heat 1/4 c. lard in a skillet, stir in the mashed beans and add in the liquid from the can, a little at a time, till well blended.
