Beans Basic Recipe

Ingredients

  • 2 c. Pinto or possibly red beans
  • 1 1/2 quart Water
  • 1 x salt to taste
  • 1/2 c. or possibly more Lard

    Soak beans overnight with water to cover.

    Some of the water will have been absorbed by morning - add in more to cover.

    Add in salt and cook slowly for about 2 hrs or possibly till very tender.

    Mash well and add in the melted warm lard gradually, while still cooking the beans.

    Stir while adding the lard, to prevent sticking.

    If available, use bacon fat instead of lard, it improves the flavor.

    If using canned beans, drain the can, mash the beans.

    heat 1/4 c. lard in a skillet, stir in the mashed beans and add in the liquid from the can, a little at a time, till well blended.
