- 2 Tbsp. olive oil
- 1 large green bell pepper, coarsely chopped (1 1/4 c.)
- 1 tsp. minced garlic
- 2 (16 oz. each) cans black beans, undrained
- 1 (4 oz.) jar, sliced pimientos, drained
- 3 Tbsp. red wine vinegar
- 1/2 tsp. dried oregano
Directions

1Heat oil in a large skillet.

2Add green pepper and garlic. Cook over medium heat, stirring often, 3 to 5 minutes, until pepper is crisp-tender.

3Stir in remaining ingredients, increase heat and bring to a boil.

4Reduce heat, cover and simmer 5 to 7 minutes, until pepper is tender.
