Beans & Rice Enchiladas

  • 1 box Uncle Ben's Rice
  • 1/2 c. diced onions
  • 1/2 c. salsa
  • 1/2 c. diced green pepper
  • 1 tsp. vegetable oil
  • 8 warm corn tortillas
  • 1/2 c. shredded cheese

Directions

    Cook beans and rice according to package omitting margarine. Preheat oven to 350°.

    In a skillet, brown onions and peppers in oil.

    Add to beans and rice.

    In each tortilla spoon 1/3 cup of beans and rice.

    Roll up and place on oven proof casserole dish. Pour salsa over enchiladas.

    Sprinkle with cheese and bake in 350° oven for 10 minutes.

    Makes 4 servings.
