- 3 to 4 lb. bear roast
- 1 onion, diced
- 2 bay leaves
- salt
- pepper
- 1 c. water
Directions

1Preheat roaster oven to 325°.

2Place roast on a rack and salt and pepper.

3Place 2 bay leaves on top of roast and then the onion. Add water.

4Make a foil tent over roast and put cover on.

5Bake 3 to 4 hours, until tender.

6Check periodically to make sure it's not dry.

7Add water if necessary.
