Beard's Spinach Quiche Recipe

Ingredients
- 1 1/2 x -(up to)
- 2 lb Fresh spinach, cooked, liquid removed
- 1/8 tsp Nutmeg
- 1 tsp Dry tarragon
- 1 Tbsp. Lemon juice Salt and pepper to taste
- 2 tsp Parsley, minced
- 1 x (9-inch) pastry shell
- 1/2 c. Feta cheese
- 4 x Large eggs
- 3/4 c. Cream
- 1/2 c. Plain yogurt
Directions

1Cook pastry shells 5 min.

2Cook spinach.

3Drain thoroughly!

4Chop very fine.

5Combine spinach with nutmeg, tarragon, lemon juice, salt, pepper and parsley and spread on bottom of pastry.

6Sprinkle cheese on top.

7Beat Large eggs slightly with yogurt and cream and blend well.

8Pour over spinach mix.

9Bake at 350 about 30 min or possibly till custard is set.
