- 1 1/4 lb. beef tenderloin (middle cut)
- 2 Tbsp. butter
- 1 1/2 tsp. salt
- 1/4 c. water
- 10 potatoes
- 6 Tbsp. butter
- 1 to 2 cloves garlic, minced
- 2 Tbsp. finely chopped parsley
- dash of ground pepper
Directions

1Trim fat off meat.

2In a skillet, heat butter until lightly brown.

3Add meat.

4Brown well on all sides.

5Sprinkle with half salt and pepper (salt can be reduced).

6Reduce heat.

7Cover and let meat cook for about 10 minutes, turning over during cooking time.

8Remove meat and cover with foil.

9Set aside.

10Add water to pan and heat.

11Scrape browning and strain juices.

12Peel potatoes and slice thinly.

13Layer potatoes on a slightly greased ovenproof dish.

14Sprinkle remaining salt between layers.

15Pour pan juice over layers.

16Bake potatoes at 425°.

17Slice beef and place on top of potatoes.

18Stir together softened butter, minced garlic and parsley.

19Spread over meat.
-
20Heat at 425° for about 8 minutes.
