- 1/2 lb. ground beef
- 1/4 c. chopped onion
- 1 tsp. garlic
- 1 lb. eggplant, peeled and cubed
- 1 can tomatoes, undrained
- 1/2 tsp. oregano
- 1/4 tsp. basil
- 3/4 c. Ricotta cheese
- 1/4 c. cottage cheese
- 1 egg
- 2 Tbsp. parsley
- 3 Tbsp. Parmesan cheese
Directions

1Cook beef, onion and garlic in skillet until browned; drain. Stir in eggplant, tomatoes, oregano, basil, salt and pepper. Simmer 30 minutes on low heat.

2Beat Ricotta, cottage cheese, egg, parsley and 1 tablespoon Parmesan until smooth.

3Layer 1/2 of eggplant mixture in 1-quart casserole dish.

4Add 1/2 cheese mixture.

5Repeat layers and sprinkle with remaining Parmesan cheese.

6Bake 20 minutes at 400°.
