- 3 lb. cubed beef
- salt and pepper to taste
- 4 onions, chopped
- 1/4 c. brandy
- 2 c. sour cream
- 1 c. beef stock (bouillon)
- grated rind and juice of 1 lemon
- 3 Tbsp. flour
- 12 ripe Italian or prune plums, baked and pitted
- 1/2 c. ripe olives, halved
Directions

1Brown meat in a little oil.

2Season with salt and pepper.

3Add onions and cook until soft.

4Heat brandy in small pan.

5Ignite and pour over meat.

6Shake pan gently until flame dies.

7Beat sour cream with the stock, lemon rind and juice.

8Stir a little of liquid into flour to make a smooth paste.

9Return to liquid mixture and mix well.

10Pour over meat.
