- 8 slices Thick Bacon, Chopped
- 1 Onion, Chopped
- 1 Red, Yellow, Or Orange Bell Pepper, Chopped
- 1 clove Garlic, Minced
- 1 pound Lean Ground Beef
- 1 cup White Rice
- 1- 1/2 cup Chopped Fresh Tomatoes
- 1 Tablespoon Tomato Paste
- 1- 1/4 cup Beef Stock
- 1 teaspoon Dried Basil
- 1/4 teaspoons Ground Black Pepper
- Fresh Basil And Shredded Cheddar Cheese, For Garnish (optional)
Directions

1Preheat oven to 355 degrees F.

2Saute bacon in an oven-safe pan over medium high heat until brown.

3Add onions, peppers, and garlic; continue to saute until onions and peppers soften.

4Add rice the cook for about 1 minute, then add remaining ingredients.

5Bring mixture to a boil, remove from heat and cover.

6Bake in preheated oven for 2030 minutes.

7Serve with fresh basil and a sprinkling of shredded cheddar cheese if desired.
