  • 8 slices Thick Bacon, Chopped
  • 1 Onion, Chopped
  • 1 Red, Yellow, Or Orange Bell Pepper, Chopped
  • 1 clove Garlic, Minced
  • 1 pound Lean Ground Beef
  • 1 cup White Rice
  • 1- 1/2 cup Chopped Fresh Tomatoes
  • 1 Tablespoon Tomato Paste
  • 1- 1/4 cup Beef Stock
  • 1 teaspoon Dried Basil
  • 1/4 teaspoons Ground Black Pepper
  • Fresh Basil And Shredded Cheddar Cheese, For Garnish (optional)

Directions

    Preheat oven to 355 degrees F.

    Saute bacon in an oven-safe pan over medium high heat until brown.

    Add onions, peppers, and garlic; continue to saute until onions and peppers soften.

    Add rice the cook for about 1 minute, then add remaining ingredients.

    Bring mixture to a boil, remove from heat and cover.

    Bake in preheated oven for 2030 minutes.

    Serve with fresh basil and a sprinkling of shredded cheddar cheese if desired.
