  • 3 or 4 cut beef shanks
  • 6 Tbsp. flour
  • 4 carrots
  • 4 celery stalks
  • 2 onions
  • 3 Tbsp. chopped parsley
  • salt and pepper
  • water

    Broth:

    Peel and cut carrots and onions into quarters.

    Chop celery (include tops).

    Heat oil in large soup pot.

    Dredge meat in flour.

    Brown on both sides in oil.

    Add carrots, celery and onions.

    Add water to cover.

    Salt and pepper.

    Bring to boil; reduce to slow boil for approximately 1 hour.
