Beef Casserole

Ingredients
- 1 large onion
- 3 stalks celery
- 1 green pepper
- 2 c. leftover pot roast or 1 lb. ground beef
- 2 Tbsp. butter or margarine
- 1 (10 1/2 oz.) can mushroom soup
- 1/2 c. water
- 1/2 tsp. salt
- dash of pepper
- 1 (3 oz.) can chow mein noodles
Directions

1Start your oven at 325° or slow.

2Cut onion, celery and green pepper coarsely.

3Chop leftover beef in small cubes.

4Cook beef in 1 tablespoon butter or margarine for several minutes (if using ground beef, cook until brown) and transfer to a medium-size casserole.

5Put remaining butter or margarine in pan; toss in chopped vegetables and cook until limp.

6Stir in mushroom soup, water, salt, pepper and mix in with the beef.

7Cover and bake 30 minutes.

8At the end of this time, remove cover; sprinkle surface with Chinese noodles and bake 10 minutes longer.

9Serves 4.
