- 14 cup white onion, chopped
- 1 stem celery, chopped
- 4 large white mushrooms, quartered
- 1 green bell pepper, chopped
- 1 tablespoon olive oil
- 28 ounces diced tomatoes
- 15 ounces chili, no beans
- 8 ounces tomato sauce
- 15 ounces red kidney beans
- 1 tablespoon chili powder
- 1 12 lbs lean ground beef
- 1 garlic clove, chopped
- 1 teaspoon salt
- 14 teaspoon black pepper
Directions

1In a large dutch oven, saute onion, celery and beef in olive oil over medium-high heat until meat is brown and veg is tender.

2Add garlic and chili powder, stir 30 seconds.

3Add chili, green bell pepper, tomatoes, beans, tomato sauce, salt and pepper, bring to a boil.

4Reduce to a simmer, cover and simmer for 1 hour.

5Add mushrooms, simmer uncovered for 15 minutes.

6Serve with cheddar cheese and sour cream if desired.
