Ingredients
- 1 to 2 lb. lean stew meat
- 4 Tbsp. shortening
- 2 Tbsp. flour
- 1/2 c. minced onion
- 1/2 c. chopped tomato or 1 (16 oz.) can whole, peeled tomatoes, chopped
- 1 tsp. minced garlic
- 1 Tbsp. minced green pepper
- 1 Tbsp. minced parsley or dried parsley
- salt and pepper to taste
Directions

1Partially freeze meat, then slice thin.

2Fry in a Dutch oven or large pot in the shortening until brown.

3Then remove from Dutch oven.

4Saute onion until tender.

5Then brown flour.

6Add the tomatoes, garlic, green pepper, parsley, salt and pepper.

7Add the meat and 2 cups of water.

8Cover and cook over low heat for about 1 hour and 30 minutes or until tender.

9Serve with cooked rice.
