Beef Egg Drop Soup

- 1 lb lean beef, very thinly sliced
- 1 tbsp light soy sauce
- 1 tbsp peanut oil
- 3 cups beef or chicken stock
- 3 None eggs, lightly beaten
- 5 oz baby spinach
- 5.5 oz bean sprouts
Directions

1Toss together beef and soy sauce.

2In a wok or frying pan, heat oil over high heat. Stir-fry beef for 3 mins, until just cooked. Set aside.

3In a large saucepan, bring stock and 3 cups water to a boil. Stir in beaten eggs. Add beef, spinach and bean sprouts. Bring to a boil and season. Serve.
