- 1 lb. ground lean beef
- 1 Tbsp. flour
- 1/4 c. chopped onion
- 1 c. seasoned tomato sauce
- 1/4 c. chopped green pepper
- 1 tsp. chili powder
- 1 small eggplant, cut in 1/2-inch slices
- 1 c. shredded sharp process cheese
- grated Parmesan cheese
- 3/4 c. water
- 1 tsp. oregano
- 1/2 tsp. salt
Directions

1Brown beef and onion in a small amount of hot fat.

2Sprinkle flour over meat; stir.

3Add tomato sauce, water, ground pepper, oregano, chili powder and salt.

5Season eggplant with salt and pepper.

6Arrange slices over meat.

8Simmer, until eggplant is tender, about 10 to 15 minutes.
