  • 1 lb. ground lean beef
  • 1 Tbsp. flour
  • 1/4 c. chopped onion
  • 1 c. seasoned tomato sauce
  • 1/4 c. chopped green pepper
  • 1 tsp. chili powder
  • 1 small eggplant, cut in 1/2-inch slices
  • 1 c. shredded sharp process cheese
  • grated Parmesan cheese
  • 3/4 c. water
  • 1 tsp. oregano
  • 1/2 tsp. salt

Directions

    Brown beef and onion in a small amount of hot fat.

    Sprinkle flour over meat; stir.

    Add tomato sauce, water, ground pepper, oregano, chili powder and salt.
