Beef Enchiladas

  • 12 corn tortillas
  • 1 lb. ground beef
  • 1 small onion, diced
  • 1/4 c. bell pepper, diced
  • 1 can enchilada sauce (Old El Paso)
  • 1 lb. Cheddar cheese, shredded
  • 8 oz. Mozzarella cheese, shredded
  • salt to taste

Directions

    Brown ground beef, onion and pepper in frying pan until ground beef is done; drain off excess grease.

    Spray a 9 x 13-inch pan with nonstick coating.

    Heat tortillas for 30 to 45 seconds in microwave.

    Put a light layer of enchilada sauce on bottom of pan. Put 1 to 2 spoonfuls of meat mixture onto a tortilla; add Cheddar cheese, then fold the sides up onto the top.

    Do the same for each tortilla, placing each into the 9 x 13-inch pan.

    Pour remaining sauce over the tortillas; top with the Mozzarella cheese.

    Bake at 350° for 30 minutes.
