Beef Enchiladas

- 12 corn tortillas
- 1 lb. ground beef
- 1 small onion, diced
- 1/4 c. bell pepper, diced
- 1 can enchilada sauce (Old El Paso)
- 1 lb. Cheddar cheese, shredded
- 8 oz. Mozzarella cheese, shredded
- salt to taste
Directions

1Brown ground beef, onion and pepper in frying pan until ground beef is done; drain off excess grease.

2Spray a 9 x 13-inch pan with nonstick coating.

3Heat tortillas for 30 to 45 seconds in microwave.

4Put a light layer of enchilada sauce on bottom of pan. Put 1 to 2 spoonfuls of meat mixture onto a tortilla; add Cheddar cheese, then fold the sides up onto the top.

5Do the same for each tortilla, placing each into the 9 x 13-inch pan.

6Pour remaining sauce over the tortillas; top with the Mozzarella cheese.

7Bake at 350° for 30 minutes.
