- 1 1/2 c. cooked beef
- 1 1/2 c. shredded sharp Cheddar cheese, divided usage
- 1/2 c. chopped onion
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- 1 (10 3/4 oz.) can condensed tomato soup
- 1 (10 oz.) can mild enchilada sauce
- 12 corn tortillas
Directions

1Combine beef, 1/2 cup cheese and onion.

2Set aside.

3Combine soups and enchilada sauce.

4Dip tortillas in hot oil to soften, a few seconds on each side.

5Top each tortilla with 1 heaping tablespoonful of meat mixture; roll up.

6Place, seam side down, in a 13 x 9-inch baking dish.

7Pour sauce over and top with remaining cheese.

8Bake in a 350° preheated oven for 25 to 30 minutes. Makes 6 servings.

9Refrigerate unused portion in airtight container.
