Beef Enchiladas

- 1 lb. ground beef
- 1 medium onion, chopped
- 1 Tbsp. chili powder
- 2 tsp. salt
- 12 corn tortillas
- 2 Tbsp. shortening
- 1/2 lb. American cheese, grated
- 1 pt. enchilada sauce
Directions

1Brown meat, onion, chili powder and salt in skillet; drain the grease.

2Soften tortillas, one at a time, in skillet with grease over low heat.

3Immediately fill tortillas with meat mixture; roll and place in greased 9 x 13-inch baking pan.

4Sprinkle 1/2 of the grated cheese and chopped onion on top of tortillas; pour on 1/2 of the enchilada sauce.

5Repeat remaining cheese, onion and sauce. Heat in a 350° oven for 15 to 20 minutes or until cheese melts. Yields 6 servings.
