  • 1 1/2lb lean ground beef
  • 1tbs olive oil,
  • 24 corn tortillas
  • 1 8 oz cab petite diced tomatoes
  • 2 tsp garlic powder
  • 2 tsp cumin ground
  • salt
  • 1/4 chili quick (chile mix)
  • 2 tsp pepper
  • 1 32oz v-8 tomatoe juice

    brown lean beef in olive oil, add tomatoes, garlic, cumin, salt to taste, cup chili quick mix,ground pepper, mix well on medium heat, add v-8 juice, stir well let simmer 10 minutes. Dip corn tortillas in olive oil to saturate well, add 1 tbs meat sauce, add cheese as desired, roll and place in pan, cover with remaining chile mixture cover with cheese, bake in oven 400 degrees for 10 minutes or until cheese is melted.
