Beef Flour Enchiladas

Ingredients
- 2 lb. ground beef
- 2 doz. flour tortillas
- 1 medium can enchilada sauce
- 1/4 c. chopped lettuce
- 1/2 chopped onion
- 2 lb. Monterey Jack cheese, shredded
- 4 chopped cooked potatoes
- 4 chopped carrots
- 1/2 tsp. oregano
- 1/2 tsp. cumin
- 2 Tbsp. salt
- 1 can chopped olives
- 1 can sliced olives
- 2 tsp. garlic powder
Directions

1Cook ground beef well.

2Drain.

3Mix into cooked beef, onion, lettuce, carrots, potatoes and chopped olives.

4Add 1 cup of shredded cheese and garlic powder.

5In separate bowl, blend cumin, oregano, water and 1/2 teaspoon salt.

6Add can of enchilada sauce. Heat the sauce in pan.

7Dip tortillas into saucepan, one by one. Add beef to dipped tortillas and start rolling them.

8Place on tray and garnish with shredded cheese and sliced olives.

9Bake at 350° for 30 minutes.
