- 1 lb. lean beef, cut into 1 1/2-inch cubes
- 3/4 tsp. salt
- 1/2 tsp. each: pepper and oregano
- 1/2 c. olive oil
- 8 ripe olives, pitted
- 2 onions, quartered
- 2 tomatoes, quartered
Directions

1Place beef cubes in bowl.

2Add salt, pepper and oregano to olive oil.

3Sprinkle over beef.

4Refrigerate for 1 hour.

5Skewer beef cubes, olives and vegetables alternating using 1/4 of each on each skewer.

6Place skewers on broiler rack.

7Broil until beef is brown, turning to brown evenly.

8Remove from skewers onto serving plate.

9Yields 4 servings.
