Beef Pot Roast

- 4 lb chuck pot roast
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 4 medium potatoes, quartered
- 1/2 lb baby carrots
- 2 medium onions, quartered
- 1 can condensed French onion soup
Directions

1Season roast with salt and pepper.

2Heat oil in a skillet over high heat.

3Add the roast and sear on each side until brown, about 4 minutes per side.

4Place half of vegetables in bottom of slow cooker crock, top with roast, then add remaining vegetables and liquid.

5Add water so that level is roughly half way up on roast.

6Cover and cook 5 hours on high.
