Beef Pot Roast

  • 4 lb chuck pot roast
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 4 medium potatoes, quartered
  • 1/2 lb baby carrots
  • 2 medium onions, quartered
  • 1 can condensed French onion soup

Directions

    Season roast with salt and pepper.

    Heat oil in a skillet over high heat.

    Add the roast and sear on each side until brown, about 4 minutes per side.

    Place half of vegetables in bottom of slow cooker crock, top with roast, then add remaining vegetables and liquid.

    Add water so that level is roughly half way up on roast.

    Cover and cook 5 hours on high.
