- 1 (3 to 4 lb.) beef pot roast
- flour (enough to coat)
- salt to taste
- pepper to taste
- 1/2 c. water
- potatoes
- small onions
- carrots, cut in 1-inch pieces
Directions

1Coat pot roast with flour.

2In Dutch oven, brown slowly on all sides in 2 tablespoons oil.

3Season with salt and pepper.

4Remove from heat.

5Add 1/2 cup water.

6Cover tightly and simmer slowly 2 1/2 hours or until tender.

7Add water, if needed.
