Beef Potato Bake

  • 1 envelope dried onion soup mix
  • 1 lb. ground beef
  • 1 c. undiluted evaporated milk
  • 1/2 c. fine dry bread crumbs
  • 1 tsp. salt
  • 4 c. thinly sliced peeled potatoes
  • 1 tsp. dried parsley flakes (optional)
  • 1/4 lb. Cheddar cheese, grated (1 c.)
  • paprika

Directions

    Stir soup mix well and add 3 tablespoons to beef, milk, crumbs and 1/2 teaspoon of salt.

    Mix lightly but thoroughly and spread evenly in a shallow 2-quart baking dish.

    Mix remaining soup and salt with potato and parsley, if desired.

    Arrange evenly on meat mixture.

    Cover with lid or foil and bake in moderate oven (350°) for 1 hour.

    Uncover and sprinkle with cheese.

    Bake 15 minutes longer and sprinkle with paprika.
