Beef Potato Boats

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/4 c. chopped green peppers
  • 1/4 c. chopped celery
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/8 tsp. pepper
  • 1 (8 oz.) can tomato paste
  • 4 medium potatoes, baked
  • 1 c. shredded Cheddar cheese

Directions

    Brown beef, onion, green peppers and celery in a skillet. Drain fat.

    Add seasoning and sauce.

    Cut potatoes 1/2 lengthwise. Scoop out and reserve shells.

    Mash potatoes and combine with meat mixture.

    Fill shells and sprinkle top with cheese.

    Bake at 400° for 15 minutes.
