  • 2 1/2 tsp. mustard seed
  • 5 tsp. Morton Tender Quick cure for meats
  • 2 1/2 tsp. garlic salt
  • 1 tsp. liquid smoke
  • 2 1/2 tsp. hickory smoke salt
  • 4 tsp. coarse black pepper

    ingredients well. Place in refrigerator, covered. Next day, knead well.

    Do this for 3 days.

    On 5th day, knead. Form into 4

    rolls.

    Place on broiler tray and bake 8 hours at 160° temperature.

    Salami forms own casing.
