Ingredients

  • 1 12 lbs flank steaks
  • 14 cup soy sauce
  • 14 cup vegetable oil
  • 2 tablespoons Asian chili sauce (to taste)
  • 14 cup packed dark brown sugar
  • 14 cup minced fresh cilantro leaves
  • 2 garlic cloves, minced
  • 4 scallions, white and green parts, sliced thin

Directions

  1. 1
Cut the flank steak in half lengthwise and put in freezer for 30 minutes (to firm).
  2. 2
Combine soy sauce, oil, chili sauce, brown sugar, cilantro, garlic, and scallions in measuring cup, set aside.
  3. 3
Remove the flank steak from freezer and slice each piece across the grain into 1/4-inch-thick strips.
  4. 4
Weave the meat onto bamboo skewers (should make about 24 skewers).
  5. 5
Dunk the meat ends of the skewers into marinade to coat; lay the skewers in a shallow dish and pour remaining marinade over top.
  6. 6
    Refrigerate for exactly 1 hour.
  7. 7
You can either grill the beef OR adjust oven rack to top position and heat broiler.
  8. 8
Lay the skewers on a wire rack set over a rimmed baking sheet and cover skewer end with foil.
  9. 9
Broil for 6 to 7 minutes, flipping the skewers over half way through, until meat is browned.
  10. 10
    Serve immediately with peanut sauce.
