  • 1 lb. beef chuck
  • 2 marrow bones
  • 3 qt. cold water
  • 2 tsp. paprika
  • 4 large carrots
  • 4 parsley sprigs
  • 2 stalks celery
  • 1 fresh tomato
  • 1 onion
  • 2 cabbage leaves
  • 3 potatoes
  • 8 peppercorns

    Place meat and bones in a large pot with water.

    Let come to a boil.

    Skim.

    Prepare vegetables by washing, peeling and chopping. Add seasoning and vegetables, except potatoes, and simmer for about 2 1/2 hours.

    Add whole potatoes and simmer for another hour.
