- 1 lb. lean boneless beef
- 8 medium potatoes
- 2 carrots
- 3 onions
- 3 c. tomato juice
Directions

1Cook beef in enough water to cover same until meat is tender. Peel and cut up potatoes, carrots and onions.

2Add vegetables to beef and if needed, add more water.

3Cook until vegetables are tender.

4Add tomato juice and bring to a boil.

5Salt and pepper to taste.

6Simmer for about 20 minutes to blend tomato juice with other ingredients.

7Serves about 6.
