  • 2 lb. lean beef, cut into cubes
  • 1/4 c. flour
  • 2 Tbsp. oil
  • 1 c. chopped onion
  • 2 cloves minced garlic
  • 2/3 c. diced celery
  • 1/4 c. chopped parsley
  • 1/2 tsp. rosemary
  • 1/4 tsp. each black pepper, thyme and oregano
  • 1/2 c. dry red wine
  • 1 c. water
  • 4 medium potatoes, quartered
  • 4 c. sliced carrots

    Coat beef

    flour and brown in oil in large Dutch oven. Add

    cook until vegetables are softened. Pour off any fat.

    Add water, wine, celery, parsley and all spices.
