- 3 lb. chuck, cut in pieces
- 4 carrots, sliced
- 3 stalks celery, chopped
- 3 to 4 medium potatoes, cut in pieces
- 2 tsp. salt
- 1 tsp. basil
- pepper to taste
- large onion, sliced
- 3 to 4 c. V-8 juice
- 1/3 c. tapioca (quick)
Directions

1Put beef, carrots, onion and celery in large casserole dish. Combine V-8 juice, tapioca and spices.

2Pour over beef and vegetables.

3Cover casserole and bake for 2 1/2 hours at 300°. Take off cover and add potatoes.

4Cook 1 hour, uncovered.

5This is also good served over rice or egg noodles.
