Ingredients

  • 3 lb. chuck, cut in pieces
  • 4 carrots, sliced
  • 3 stalks celery, chopped
  • 3 to 4 medium potatoes, cut in pieces
  • 2 tsp. salt
  • 1 tsp. basil
  • pepper to taste
  • large onion, sliced
  • 3 to 4 c. V-8 juice
  • 1/3 c. tapioca (quick)

Directions

    Put beef, carrots, onion and celery in large casserole dish. Combine V-8 juice, tapioca and spices.

    Pour over beef and vegetables.

    Cover casserole and bake for 2 1/2 hours at 300°. Take off cover and add potatoes.

    Cook 1 hour, uncovered.

    This is also good served over rice or egg noodles.
