Ingredients
- 1 small roast
- 1 Tbsp. corn oil
- 1 onion, chopped
- 1 celery stalk, chopped
- 1/4 c. chopped bell pepper
- 1 can tomatoes
- 1 fresh tomato
- 1 can beans
- 1 pkg. Equal
- 1 c. chopped carrots
- 3 or 4 potatoes
- black pepper
Directions

1Brown roast on both sides in 1 tablespoon corn oil. Remove from pot and saute onion, bell pepper and celery. Return roast to pot and add 1 cup water. Cook approximately 1 hour.

2Pour off broth and put in refrigerator to chill and remove fat.

3Put back in pot and add tomatoes (fresh and canned), beans, carrots, Equal and black pepper.

4Cook until done. Cut beef into small pieces and serve over cooked rice.
