  • 2 to 3 Tbsp. shortening
  • 2 1/2 lb. cubed stew meat
  • 2 medium onions, cut in wedges
  • 4 stalks celery, diced
  • 4 carrots, diced 1/2-inch
  • 2 cloves garlic
  • 1 1/2 c. V-8 juice
  • 3/4 c. sour Burgundy wine
  • 3/4 c. water
  • 1/2 c. tapioca
  • 1 Tbsp. sugar
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. basil
  • 1/2 tsp. marjoram
  • bay leaves
  • 3 medium potatoes, cut in wedges

Directions

    Brown meat in shortening.

    Add all ingredients except potatoes.

    Bake 1 1/2 hours.

    Stir occasionally.

    Add potato wedges and return to oven.

    Add more wine or V-8 juice if too thick.
