- 1 1/2 lb. beef stew meat, cut in 1-inch cubes
- 2 Tbsp. cooking oil
- 1 (10 1/2 oz.) can mushroom gravy
- 1 c. tomato juice
- 1/2 c. water
- 1/2 envelope onion soup mix (1/4 c.)
- 4 medium potatoes, peeled and quartered (1 1/4 lb.)
Directions

1In a heavy skillet, brown meat in hot oil.

2Drain off excess fat.

3Combine gravy, tomato juice, water and soup mix; stir into meat.

4Simmer, covered, 5 minutes.

5Place potatoes in a 2-quart casserole.

6Top with meat mixture.

7Bake, covered, at 350° until meat and potatoes are tender, 1 1/2 to 1 3/4 hours, stirring once or twice during baking.
